What is Enduri Pitha?

Enduri Pitha is a famous traditional steamed cake from Odisha. It is made from a light, fermented batter of rice and black gram (urad dal). The batter is poured onto a fresh turmeric leaf (Haladi Patra) and stuffed with a sweet mixture of freshly grated coconut, sweet jaggery, and a pinch of black pepper. The leaf is folded and steamed over hot water. No oil or ghee is used in the cooking process. As it steams, the turmeric leaf infuses the pitha with a marvelous, natural aroma that makes it soft, moist, and uniquely fragrant.

What is Dalma?

Dalma is a wholesome, thick lentil and vegetable stew enjoyed all across Odisha. It is made by slow-cooking yellow split lentils (toor dal) alongside fresh local vegetables like raw papaya, pumpkin, brinjal, plantain, and potatoes. Instead of frying ingredients in oil, the lentils and vegetables are boiled together with turmeric, ginger, and gentle spices. The stew is finished with a dash of roasted cumin and red chili powder (bhaja lanka-jira gunda). It contains zero oil, making it rich in natural plant protein and vitamins while remaining light and healthy.
